Fruit Gazpacho: use healthy apricots

What are Fruit Gazpachos? Well for starters they are healthy and vegetarian. And a great way to use up ripe apricots, cherries, watermelon and strawberries.


Fruit Gazpacho, what’s that?

Fruit Gazpacho ticks all the nutritional boxes. Raw. Healthy. Vegetarian. Yet it’s still pretty much unheard of in the UK. The big question is: why aren’t we drinking more of them? Smoothies get a lot of attention. Vegetable drinks are bang on trend. But what about the fruity Gazpacho?

Fruit Gazpacho Vs Fruit Smoothie

What’s the difference between a fruit gazpacho and a smoothie? Unlike a smoothie, this fruity alternative retains its tomato, garlic, vegetable and olive oil gazpacho base.

What fruit to add?

Apricots, peaches, raspberries, strawberries, watermelon – all work well. Try this Cherry Gazpacho recipe.

A Traditional Tomato Gazpacho with fruit

When making this Spanish fruit soup, the general rule of thumb is to replace 30-40% of the tomatoes in a classic Traditional Tomato Gazpacho recipe with your chosen fruit, but rules are made to be broken.

What about the bread?

It’s there to thicken and give body to the sopa fria. You can take it out entirely if you want to and many Spaniards will do just that.

Or, add more bread, to get a much thicker, creamier cold drink more like a fruity Salmorejo.

Apricots

Choose sweet, and almost over ripe. High in vitamins A and C – apricots will help make this soup even healthier.

Mix and match the fruits

Spanish, ten-star Michelin chef Martin Berasategui suggests mixing up the fruits. He advises to go with what is ripe and seasonal, and it is perfectly fine to replace apricots with peaches, or choose raspberries over strawberries.

How to serve Apricot Gazpacho?

Cold. Drunk straight from a glass over ice, on a hot day. Or serve in a bowl and top with slices of fresh apricot, mint, tomato seeds and drizzle of good quality olive oil.

Apricot Gazpacho Recipe

Serves: 6-8 Prep Time: 20 min
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 500g yellow and red tomatoes
  • 500g apricots (without stones)
  • 10g yellow pepper
  • a third of a garlic clove (crushed)
  • 50g bread crumbs
  • 50ml olive oil
  • salt (to taste)
  • sherry vinegar (to taste)

HOW TO MAKE IT

  1. Chop all the ingredients into chunks and place in a large bowl along with the olive oil and the crushed garlic.
  2. Allow to infuse (covered) in the fridge for a few hours, or overnight.
  3. Blend with a magimix (or hand blender), adding cold water to thin the soup if it is too thick. 
  4. Pass through a drum sieve.
  5. Season with salt and sherry vinegar and return to the fridge to chill for at least a few hours.
