Fruit Gazpacho Vs Fruit Smoothie
What’s the difference between a fruit gazpacho and a smoothie? Unlike a smoothie, this fruity alternative retains its tomato, garlic, vegetable and olive oil gazpacho base.
What fruit to add?
Apricots, peaches, raspberries, strawberries, watermelon – all work well. Try this Cherry Gazpacho recipe.
A Traditional Tomato Gazpacho with fruit
When making this Spanish fruit soup, the general rule of thumb is to replace 30-40% of the tomatoes in a classic Traditional Tomato Gazpacho recipe with your chosen fruit, but rules are made to be broken.
What about the bread?
It’s there to thicken and give body to the sopa fria. You can take it out entirely if you want to and many Spaniards will do just that.
Or, add more bread, to get a much thicker, creamier cold drink more like a fruity Salmorejo.
Apricots
Choose sweet, and almost over ripe. High in vitamins A and C – apricots will help make this soup even healthier.
Mix and match the fruits
Spanish, ten-star Michelin chef Martin Berasategui suggests mixing up the fruits. He advises to go with what is ripe and seasonal, and it is perfectly fine to replace apricots with peaches, or choose raspberries over strawberries.
How to serve Apricot Gazpacho?
Cold. Drunk straight from a glass over ice, on a hot day. Or serve in a bowl and top with slices of fresh apricot, mint, tomato seeds and drizzle of good quality olive oil.
