Eat like an Olympian for a Healthier Life 

Olympian Kitchen is a weekly newsletter run by me, Nicola Fairbrother. I’m an Olympian, a chef and I’m fascinated about how what we eat can make us fitter and healthier. 

My mission is to help you take care of your body and eat nutritious, delicious food. By improving what we put in, we improve what we get out. 

I will share cooking skills, techniques learnt training to be a chef at Leiths School of Food and Wine and tips from working (100 Day Michelin Chef Challenge) in restaurants in Spain. 

Look forward to recipes with a Mediterranean, Spanish touch. Recipes that you can read quickly, and don’t take too much time to make.

What’s an Olympian doing in a Kitchen?

A few years ago I decided a needed a new challenge and enrolled at Leiths School of Food and Wine, in London to become a chef.

Nine months later, and I passed the professional diploma; I was a chef. But not only that. I’d found a new passion. Something to fill the gap after sport. Not surprising – the parallels between sport life and chef life are many.

After culinary school, I staged at various Michelin star restaurants and worked alongside some of the best chefs in the world. Michelin starred chefs like Andoni Aduriz, Maria Jose San Roman, Susi Diaz, Scott Davies, Aizpea Oihadener, Xabi Diez and Pablo Montoro are just some of the chefs who have already kindly opened their kitchens, and their ideas to me. They have been wonderful teachers.

I have written for The Sunday Times, The Guardian, The Independent and The Times, and commentated for the BBC at three Olympic Games. I also publish and design the Koka Kids range of children’s judo books.
